Elecampane

Elecampane, also called velvet dock or yellow starwort, is a flowering plant in the daisy family, originally native to Europe and now naturalized in other parts of the world. Its roots are rich in inulin, a naturally occurring fiber also present in many fruits. Inulin is often used as a mild, plant-based sweetener and acts as a prebiotic to help promote healthy digestion.
